Video: Pasta with Pesto sauce

You don’t always have time in the evening to cook a real hearty meal, but you don’t want to settle for snacks either. A quick dinner of pasta will come to our aid; it is always on hand, can be cooked once, twice, three times, and when served correctly, is also very tasty! In addition, you can combine them with anything - from fresh and canned vegetables, to meat, fish, sausages, eggs and even... sugar!

Pasta is absolutely universal, quick to prepare, has a relatively neutral taste, and therefore is loved by everyone and extremely popular. Here you will find a selection of a wide variety of dinner recipes from them.

Nuances when cooking pasta

Type of pasta

We choose only those made from durum wheat - there is always a corresponding mark on the pack, and we carefully read the composition. Any other varieties will cook too quickly and the taste will be different.

Form

For dishes where the recipe produces a large amount of sauce, it is best to choose horns, shells and other well-rolled types - they absorb the sauce better. For those where the sauce is served separately or not at all, you can use spaghetti or noodles.

Amount of water

To prevent pasta from sticking together, the volume of water should be at least 2 times greater. If there are no special notes in the recipe, there is no need to add anything other than salt to it.

Readiness degree

Pasta is considered healthiest when cooked al dente, that is, left slightly firm.

Now you can start preparing a quick dinner!

Pasta with smoked brisket

In dietetics, the combination of dough and animal protein is considered one of the heaviest, and in the cooking of different nations it is very common due to its ability to quickly and for a long time satisfy hunger. If this is exactly the task you are faced with, we prepare dishes with meat, poultry, smoked meats and sausages!

  • We put 1.5 liters of water to boil for 250 g of spaghetti and, while it boils, cut 200 g of brisket (bacon, boiled pork, ham) into strips.
  • Heat 1 tbsp in a frying pan. olive oil and fry in it first a couple of chopped garlic cloves, and then, when they are browned, slices of brisket.
  • We do this over low heat, stirring all the time - you don’t want the garlic to burn. After 6 - 7 minutes, add 1 sweet bell pepper, cut into cubes. Having brought it to readiness, pour in 200 g of sour cream, add some salt, sprinkle black and allspice pepper and cover with a lid.

Simmer for another 15 - 20 minutes, add 50 g of grated cheese and turn off.

Boil the spaghetti until cooked, keeping it on the fire after boiling for no longer than 10 minutes, drain it in a colander and serve immediately, pouring the sauce on top.

Quick dinner with chicken breast

It’s also quick to make, but the taste is significantly different, and poultry fillet pasta is considered more dietary.

  1. Let 250 g of frozen turkey or chicken fillet melt a little and chop it finely. For particularly fine textured meat, you can even use a potato peeler.
  2. Fry a clove of garlic in olive oil and then add the chopped fillet. Fry it stirring all the time so that it does not burn.
  3. After 5 - 6 minutes, add salt and pepper, add nutmeg and a couple of allspice peas.
  4. Keep it on the fire for another half a minute and pour in 100 ml of hot water. As soon as it boils, add 100 - 150 g of soft processed cheese. Stir it until the sauce becomes homogeneous.

Simmer covered for 15 minutes, turn off.

Boil spaghetti or noodles until tender and serve sprinkled with sauce or already mixed with it.

If you don’t want to feel the taste of processed cheese in the dish, we’ll cook the fillet in a creamy sauce.

  • Pour the chicken in the frying pan not with water, but with 200 ml of heavy cream.
  • Without bringing it to a boil, carefully pour in the beaten egg yolk.
  • Stir, add salt, season and pour in 50 g of grated cheese.
  • Warm the sauce for another minute and turn it off.

Pasta with meat in tomato sauce

This recipe makes a rich and satisfying dish!

  • Bring water to boil over the pasta. They will need to be boiled until half cooked, literally within 5 - 6 minutes.
  • Cut the peeled onion into half rings and fry it until transparent in vegetable oil.
  • Just as in the previous recipe, very finely chop the frozen beef pulp (200 g) and add it to the onion.
  • Fry the meat until golden brown, add salt, season with black and white pepper, add thyme, oregano and 2 tbsp. tomato paste. Mix everything, heat for 3 - 4 minutes, drain our semi-finished spaghetti and place it in the frying pan with the meat.
  • Immediately pour a glass of boiling water or beef broth over everything.

Stir, reduce heat and cover with a lid. Simmer for 5 – 6 minutes, turn off and serve! A quick dinner of pasta and meat is ready!

Pasta with sausages

Of course, there is no way to ignore the basic combination, but we will prepare it a little differently!

Option 1

Spaghetti with sausages turns out to be very interesting and funny if you cut the latter into 3 parts, passing vermicelli through each 10 - 12 pieces.

Having cooked everything until done, we will get unusual “hairy” sausages! Serve them well, garnished with ketchup, herbs and canned peas.

Option 2

But if you want something more serious and sophisticated, let’s prepare pasta casserole.

  1. Boil 250 g of penne or other pasta until tender.
  2. Cut 4 sausages randomly and place them in a greased deep frying pan. Season with basil and rosemary, add allspice and put in a hot oven for 7 - 8 minutes.
  3. When a golden, bubbling crust appears, take out the sausages and add penne to them. Stir, add 3 tbsp if desired. boiled green beans, the same amount of broccoli and cauliflower or frozen green peas.
  4. Beat 3 eggs, add 50 g of grated hard cheese or 2 tbsp. cream, season and pour pasta with sausages and vegetables.

Bake at 220°C for 20 – 25 minutes. Serve the casserole hot for dinner, sprinkled with herbs. Bon appetit!

Shrimp pasta for dinner

While the recipe for spaghetti with seafood in creamy sauce has become almost popular, the more ascetic pasta with shrimp and baked cherry tomatoes is not so well known.

  • Cut 300 g of cherry tomatoes into halves and place on a greased baking sheet. Sprinkle with basil, chopped garlic, drizzle with olive oil and place in a hot oven for 10 minutes until they wilt a little.
  • We put water on the fire and, as soon as it boils, add salt and put 250 g of spaghetti to cook.
  • We defrost and peel half a kilo of shrimp in the shell, leaving only the heads and meat of the “necks”.
  • Fry 4 halves of garlic cloves in olive oil. When they give off an aroma, remove them and add the shrimp heads. We press them under pressure so that the juice comes out, hold them for 2 - 4 minutes and also remove them.
  • Place the shrimp necks into the resulting broth to cook. Salt them, pepper them and keep them on low heat until a golden brown crust appears.
  • Drain the spaghetti and place it in the pan with the shrimp.

Mix everything. Simmer for 1 - 2 minutes and turn off.

Serve with baked cherry tomatoes, sprinkled with herbs. Dinner will be not only quick, but also healthy!

Pasta with salmon

You can use either salted salmon or frozen steak, so we offer you two options to choose from.

Option 1 (with salted fish)

  1. Fry 2 finely chopped garlic cloves in butter in a frying pan, add bell pepper cut into strips (0.5 by 3 cm).
  2. Pour in all ½ tbsp. boiling water or vegetable broth, add 1 tsp. mustard and 1 tbsp. soy sauce. Let it simmer and pour in 50 g of grated cheese.
  3. Cut 150 g of salted salmon into long thin slices and add to the cheese mixture, remove from heat.

Boil the spaghetti al dente and mix with the sauce. Serve the pasta hot, garnished with herbs.

Option 2 (with frozen fish)

  2. Boil the pasta until tender and drain.
  3. Cut cherry tomatoes (200 g) into halves; if we have regular tomatoes, cut them into circles approximately 0.7 mm thick. Fry them together with garlic (1 - 2 cloves) in butter or olive oil - the taste will change greatly, so choose at your discretion.

Place the pasta in the pan with the tomatoes and gently stir once, being careful not to damage the vegetables. Heat over very low heat so that the dish does not burn.
