There are many more khachapuri recipes than you might imagine. But there are still famous ones, those who have crossed the borders of the country and are firmly associated with the “Georgian khachapuri” brand.

You can enjoy them in restaurants serving Georgian cuisine, or in cafes that serve khachapuri and Lagidze water. Among the most famous are puff khachapuri, “boats” (Adjarian khachapuri) and Imeretian cheese flatbreads. As it turns out, all these extraordinary delicacies can be prepared at home. Preparation

Place the dough on the board and leave it there for about 30 minutes to warm up to room temperature after refrigeration. Preheat the oven to 200 degrees.

Mix the cheeses together and grind them until mushy.

Break the egg into the bowl and whisk a little so that the yolk and white are mixed.

Add most of the egg with the cheese mixture, leave less to grease the dough on top.

Using a pastry cutter (ribbed or pizza cutter), cut the dough into 12-15 cm squares.

Place some cheese mixture in the center of each square. Its quantity depends only on your taste, but usually enough cheese fits in 1 tablespoon.

You can shape khachapuri in different ways: you can bend the dough into triangles, or into “envelopes”. To make triangles, just bend the dough diagonally and connect the edges (“glue”) with a knife. Or fasten them in the process of “cutting with a knife.” The main thing is that the cheese mass is not affected and manipulations are carried out only with the dough. Finally, when you brush the dough with egg, it will “press” the edges even more so they won’t open up.

“Envelopes” is a slightly more complex form. If you decide on it, fold all four ends of the dough towards the center and pin them together at the beginning, leaving them partially loose towards the center. If you leave free, unfastened spaces, the cheese mass will flow out a little through them and will look like in the final pictures. It’s beautiful, just try to let the khachapuri open the cheese just a little bit (otherwise it will all spill out).

Reduce the temperature in the oven to 160 degrees and place the khachapuri on a baking sheet lined with baking paper.

Puff pastry for khachapuri from homemade dough

If you've never tried making puff pastry before, don't worry - it's not difficult at all and doesn't take long.

Make the preparations:

  • 500 g wheat flour;
  • 75 g melted butter;
  • 300 g chilled butter;
  • salt;
  • 1 glass of water.

So this is what the process looks like:

  1. The flour is sifted and poured into a heap onto the surface where the dough will be kneaded.
  2. The cooled butter is wrapped in parchment so that it is convenient to form something like a rectangle or square out of it.
  3. A depression is made in a mound of flour and water and melted butter are poured into it, along with salt (in these proportions, about 2 teaspoons), after which the “preliminary” dough is kneaded - elastic and pliable. The dough will need to rest, so cover it with film and leave it alone for 40 minutes.
  4. After standing, the dough is rolled out into a sheet, in the middle of which the same rectangle of butter is placed. Then the dough is folded into an envelope, rolled out, folded again and left in the refrigerator for 30 minutes. The procedure should be repeated 3 to 6 times.

Khachapuri with suluguni

Suluguni is a very tasty cheese and it behaves wonderfully during heat treatment. That is why it is the most popular of the cheeses used for filling such pies.

Ingredients:

  • 500 g puff pastry;
  • 500 g suluguni cheese;
  • 50 g butter;
  • 1 chicken protein (boiled);
  • 1 chicken yolk (raw);
  • greenery.

Preparation

  1. Preparation will take almost no time. Especially if you are working with purchased dough. But there is one caveat - the dough will need to rest in ready-made khachapuri, so take this time into account.
  2. Start by preparing the filling: grate the suluguni on a coarse grater, do the same with the protein. Mix them together, adding salt and chopped herbs.
  3. The dough is defrosted according to the instructions usually located on the package. Unlike simple puff pastry, yeast dough is sold in the form of a briquette, which must thaw completely, but not soften at the same time - catch this moment, otherwise the layers will mix.
  4. After thawing, the briquette is rolled out and cut into squares, approximately 15 cm apart. The prepared filling is laid out in them, and then the edges are raised up and pinched together in the middle.
  5. Place the filled khachapuri on a baking sheet, pre-greased with oil, and leave for half an hour. Then they are greased with yolk and baked at 200 degrees for about 20 minutes.

Khachapuri with feta cheese and cottage cheese from store-bought dough

In order for your khachapuri to come out especially tender and piquant, you should choose the fattest cottage cheese possible, and the cheese, on the contrary, should be drier.

Ingredients:

  • 1 package of puff pastry without yeast;
  • 200 g cheese;
  • 200 g cottage cheese;
  • 3 chicken eggs;
  • greenery.

Preparation:

  1. Grind the cottage cheese through a sieve, and grind the cheese on a grater. Mix and add 2 eggs and chopped herbs to the resulting mass. Now get to the pies themselves.
  2. After defrosting the dough according to the instructions, roll it out, fitting the sheets to the shape of the baking sheet. Lay out layers of dough and filling alternately, but so that the last layer is dough. Lubricate it with an egg, which you beat first and put it in the oven for half an hour, heated to 180 degrees.
  3. When the pie has cooled, cut it into portions.

Khachapuri is a dish of Georgian cuisine. It consists of a flatbread with cheese, although alternative fillings can include meat or steamed fish. Traditionally, the dough recipe for this dish includes matsoni. This fermented milk product cannot always be found on sale, so it is often replaced with kefir or sour cream. The dishes differ not only in the recipe, but even in the form. A striking example is Adjarian khachapuri. They are boat-shaped, unlike other round varieties of this dish. In addition, open Adjarian cheese cakes are topped with a soft-boiled egg.

You can bake khachapuri yourself at home from ready-made puff pastry, then preparing this dish will take no more than half an hour. The classic version of the filling is Imeretian cheese. However, you can safely experiment with it. It could well be suluguni cheese or a mixture of cheeses - mozzarella, feta and feta cheese. You can also add cottage cheese, garlic and chopped herbs to them. It is believed that the ideal ratio of filling and dough is 1:1. But if you can make more filling, the dish will only benefit from it.

    (or a mixture with mozzarella, feta and cheese cheeses, you can add a little cottage cheese);
  • 2 sheets of ready-made puff pastry;
  • 2 eggs
    (1.5 eggs for filling, 0.5 eggs for brushing khachapuri before baking in the oven);
  • 1 tbsp. l. soft butter.

How to cook khachapuri with cheese:



  1. Grind the cheese using a coarse grater and pour it into a deep bowl.
  2. Add eggs and soft butter to the cheese. To allow it to thaw, remove it from the refrigerator in advance. Mix the filling well. If you wish, you can make not just a filling with cheese, but add finely chopped parsley and dill, cottage cheese, a little salt and crushed garlic to it.
  3. Roll out the puff pastry. The thickness of the layer should not be less than half the little finger, otherwise the dough will tear and the filling will come out. Cut out squares of puff pastry with a side of about 15 cm.

  4. Place the cheese filling in the center of the square using a tablespoon.
  5. Pin the opposite corners of the square in the center so that the filling is inside and the dough square takes on the appearance of an envelope.

  6. Fasten all the corners of the resulting envelope in the center again, as shown in the photo.
  7. Turn the resulting “ball” over with the folds facing down and carefully roll it out using a rolling pin. You should get a cheese cake.
  8. Prick the flatbread with a sharp fork and make a hole in the center.

  9. Place the khachapuri on a baking sheet. You can moisten it with water or cover it with parchment paper.
  10. Whisk the remaining egg in a mug with a fork until the white and yolk are mixed.
  11. Brush the khachapuri with egg before placing in the oven. This way they will turn out more rosy and appetizing.
  12. Place the sheet of khachapuri in a hot oven (t=200°C) for 20 minutes. They will be ready when the top is browned.

  2. Add one egg and one tablespoon of melted butter. Mix everything in a large cup.

  6. Having secured the product, you place it seam side down on an oiled table and roll it out with a rolling pin. You should get flat cakes that need to be placed on a greased baking sheet and put in the oven.
  7. The oven should be heated to 250 degrees. Fry the khachapuri for about 20 minutes, this is enough for the dough to bake and the cheese to completely melt.
