Whatever recipe you choose - with or without yeast - the taste and appearance of the pancakes depends on some tricks.

  • Flour for flatbreads must be sifted - then the pancakes will be fluffy. Moreover, this must be done at least 3 times.
  • To ensure that the dough is laid out well in the pan, the spoon should be wetted in water each time.
  • Yeast must be added to the flour, and not vice versa - then the dough will not settle.
  • The taste of pancakes does not depend on the type of yeast - dry or pressed.
  • Instead of water, you can use low-fat kefir, milk or whey.
  • The more acidic the dairy product used, the fluffier the pancakes.
  • Place the flatbreads on a well-heated frying pan.

  • There should be a lot of oil for frying, otherwise the pancakes will not only not rise, but also not bake. Some lovers of fluffy flatbreads advise cooking them in the oven. Fans of nonstick cookware will be disappointed: the coating doesn't require oil, so it's great for frying pancakes, but not pancakes.
  • Citric acid must be added after the flour, otherwise the pancakes will not rise, but, on the contrary, will settle.
  • Before serving, pour jam or sour cream over the still hot pancakes - they will soak in and become even tastier.
