Today I decided to make cinnamon pretzels for the first time. I usually bake often, but I haven’t baked pretzels yet. I was interested in what a pretzel is, why it has this shape, and why it is so popular.

Here's what I learned: the word has German roots and is translated as twist (bend). In northern European countries, the pretzel is the emblem of store signs and bakeries. It was once baked by monks as a sign of gratitude to the Creator, and it symbolizes the hands of a person praying crossed on his chest.

So this pastry is not just delicious, but also with deep meaning.

To prepare cinnamon pretzels, prepare the ingredients according to the list.

Take flour, sugar, sour cream, soda, honey, butter at room temperature, egg, and a pinch of salt. Just combine all the ingredients together and knead a soft, manageable dough.

And roll the flagella with your hands. Or you can roll out the dough into a rectangular layer, cut it into strips and roll flagella from the strips.

Fold the flagella into a pretzel shape as shown in the picture.

Mix sugar and cinnamon and dip each pretzel into the mixture on one side.

Place the cookies on a baking sheet with the “clean” side and bake in an oven preheated to 180 degrees for 15-20 minutes, until lightly browned.

Ingredients

  • Wheat flour – 2 cups__NEWL__
  • Granulated sugar – ½ cup__NEWL__
  • Cream margarine – 75 grams__NEWL__
  • Chicken eggs – 1 pc.__NEWL__
  • Kefir – 4 tbsp. spoons__NEWL__
  • Salt – ¼ teaspoon__NEWL__
  • Soda – ¼ teaspoon__NEWL__
  • Sesame – for sprinkling__NEWL__

Let's start preparing the dough for homemade cookies by preparing a deep and convenient container for kneading. Sift wheat flour into it. Add the required amount of salt and soda. Mix everything thoroughly.

Then, in another deep container, mix kefir, egg and granulated sugar. Mix everything thoroughly.

Mix the above ingredients until the granulated sugar and salt are completely dissolved.

Separately, knead the creamy margarine with a wooden spatula. We do this for 7-8 minutes.

The mashed margarine will look approximately the same as in the photo.

Gradually we begin to introduce a mixture of sour cream with granulated sugar and egg into the mashed creamy margarine.

Then add flour to this mixed mass and mix very quickly. Why is it so important to mix the dough quickly? Because, like soda, when it comes into contact with the acid in kefir, it forms carbon dioxide. And this gas can evaporate during prolonged mixing. And because of this, the product will turn out hard, dense and not loose.

Our dough is ready. Let's form it into a ball. Yes, by the way, kefir can be replaced in the dough with sour cream, yogurt or other fermented milk product.

Now to sprinkle our homemade cookies in a frying pan, lightly dry the sesame seeds over low heat, stirring constantly with a wooden spatula.

Prepare a baking tray for baking cookies. Cover it with parchment paper. Lightly dust the work surface with wheat flour. Then roll out a thin layer using a rolling pin. Cut it into strips about 1 cm wide.

We form “pretzels” from the strips, as shown in the photo. Place them separately next to each other on a sheet lined with parchment paper.

Sprinkle sesame seeds on top of cookies.

Ingredients

  • 50 g almonds
  • 50 g hazelnuts
  • 270 gr wheat flour
  • 2 tbsp. corn starch
  • 1/4 tsp. baking powder
  • 130 g sugar
  • 2 tbsp. lemon zest
  • 200 g butter
  • 3 pcs. egg yolk
  • 50 g powdered sugar

Cooking method

    Grind the nuts to flour. The skin does not need to be cleaned. Lightly fry the nut flour in a frying pan until a light nutty aroma appears. Cool.

    To prepare the dough, it is best to use a blender so that the dough does not have time to heat up from the heat of your hands. Place wheat flour, nut flour, corn starch, baking powder, sugar into a blender bowl. Wash the lemon thoroughly and remove the zest from it using a fine grater (only the yellow layer). Cut the cold butter into pieces. Add butter, zest and egg yolks to flour.

    Knead the dough in a blender bowl. At first it will acquire the consistency of loose, wet crumbs.

    Place the dough on the table and quickly gather it into a ball with your hands, then shape it into a flat cake. Wrap the dough in film and refrigerate for at least 1 hour (or longer).

    Turn on the oven and preheat to 175 degrees. From the chilled dough, separate pieces of the same size, approximately 12 grams each.

    Roll the dough into a thick sausage and shape into a horseshoe. It is advisable to do everything very quickly, while the dough is still cold and quite plastic.

    Place the pretzels formed in this way in rows on a baking sheet lined with baking paper.

    Bake in the preheated oven for 20 minutes until cooked through and lightly golden brown. The finished cookies are initially very fragile, so you need to let them cool for 2-3 minutes, then carefully remove them from the baking sheet. While still warm, roll it carefully on all sides in vanilla-flavored powdered sugar.
