All the recipes for cutlets or liver pancakes that I came across contained either starch or bran.

But since I always bake something, I feel sorry for using bran and DOPs for main courses, so this simple recipe came about.

I usually pre-fry the liver in a frying pan this way: I grease the frying pan with vegetable oil using a silicone brush. I lay out the liver and fry over high heat for about 5 minutes, stirring constantly, as if sealing the juice inside. Then I cover it with a lid and keep it on low heat for another 5 minutes.

You can boil it. To do this, place the liver in boiling water, bring to a boil and cook for 10-12 minutes. Take it out and cool it.

Why pre-cook the liver? Because in its raw form it gives a lot of juice when cooked and then the addition of starch or bran is required.

I cook 600-700 g at once, it keeps well in the refrigerator for several days.

If necessary, I take out and prepare liver salad, such pancakes or filling for pancakes.

Very comfortably.

Necessary:

  • Chicken liver (boiled or fried) - 200 g
  • Eggs - 2 pcs. (large)
  • Garlic - to taste (fresh or dry)
  • Salt - to taste
  • Soda - 1/4 tsp.
  • Spices - black pepper
  • Oil for greasing the pan

Preparation:

Boil the liver or fry it in a frying pan until tender.

Cool.

Grate on a coarse grater.

Add salt, soda, eggs, spices (I used ground black pepper and dry garlic).

Mix.

Fry over medium heat like regular pancakes.

I cover it with a lid.

The pancakes turn out fluffy and tasty.

These pancakes can be served to the whole family.

Mayonnaise or yogurt sauce with dill and garlic goes well with them.

Dear blog readers, hello! Today I made delicious chicken liver pancakes, mmmm! Of course, according to Dukan. But the recipe is one that most people will like.

If you're not on the Dukan diet, I still recommend trying these pancakes!

Finely chopped green onions and dill were added to the liver. Fresh herbs give pancakes a unique light, summer aroma. It turned out very tasty!

These pancakes can be prepared according to different recipes, the number of which I can’t even begin to count. But almost every recipe has its own twist, and this recipe has it too.

In a bowl, combine bran, egg, soy sauce, dill and garlic. While we are working with the liver, the bran will swell slightly.

We cut the thawed, washed chicken liver with a knife into small pieces, about 1 x 1 cm. I think you can also chop it with a blender. This, in fact, is the peculiarity of this recipe.

Not a single action I took with my liver escaped the attentive eyes of the observer :)

We combine all the ingredients. Take a frying pan with a good non-stick coating and place it on the stove. Place the pancakes on a heated frying pan with a spoon and bake, frying on both sides. As you can see, I still added a few drops of oil to be on the safe side, but I couldn’t resist. Chicken liver cooks quickly, so it is important to fry the pancakes, but not to overcook them, otherwise they will taste a little less tender. You can cover with a lid during the process.

This is such a tasty and healthy dish today - chicken liver pancakes. There were quite a lot of them, it was impossible for one person to eat at once. The three of us couldn't finish it - the dish was very filling. For lunch we tried hot ones with cottage cheese sauce (I did), and the family devoured them with regular sour cream and mashed potatoes. In the evening we took the leftovers out of the refrigerator - cold ones are also delicious, forgive my indiscretion :)

On the Duan diet, you should eat exclusively the right protein foods that do not contain carbohydrates, and this applies to just such foods. It goes well with other approved products for this diet and is great for preparing salads, pates, Dukan casseroles, and is also delicious fried, boiled, and stewed. Dukan liver can be prepared with or without vegetables, and if you show a little culinary imagination, you can prepare excellent restaurant-quality dishes from simple and affordable ingredients.

Chicken liver according to Dukan

This recipe for chicken liver according to Dukan is suitable for all stages of the Dukan diet, since it contains only protein products, some spices and salt. During the attack stage it is better to refrain from vegetables, but in the following stages you can cook such liver according to Dukan with vegetables for BO days and according to the schedule of permitted products and additional supplements.

Chicken liver should be cut in half and quickly fried in a preheated non-stick frying pan, greased with just a drop of olive oil, then put in a saucepan with thick walls. Pour the liver with kefir with a fat content of 1% and add spices and salt, and simmer over low heat for one hour, the longer you simmer, the softer the liver will be. If you are preparing liver according to Dukan on protein-vegetable days, then you can add onions and carrots in the middle of cooking and simmer until tender.

Chicken liver pate according to Dukan

Chicken liver pates belong to classic French and English cuisine, but why don’t we make such an exquisite dish in our kitchen? Moreover, if you have a good blender and a silicone mold for baking “brick” bread, you can prepare a delicious dish that will be tasty and acceptable at every stage of the Dukan diet.

To prepare liver pate according to Dukan, you should take:

  • 500 grams of chicken liver
  • 2 medium onions
  • 1 carrot
  • 4 tablespoons oat bran
  • salt and spices to taste

Wash the liver, dry with napkins, cut into large pieces and fry in 1 teaspoon of vegetable oil over medium heat until an even white color appears, then put in a blender and grind. In the fat remaining after frying the liver according to Dukan, fry the vegetables, to do this, grate the carrots on a fine grater, cut the onion into rings and fry until an even golden color is obtained, put in a blender and beat with the liver into a homogeneous base for the pate.

Beat the eggs with salt and spices, add to the minced meat and adding bran, bring the base for Dukan chicken liver pate to the consistency of thick sour cream. Be sure to take into account the amount of bran to divide this dish by the number of days of consumption. Combine all the ingredients of the dish and place in a baking dish, cook Dukan liver pate in an oven preheated to 160 degrees for 50 minutes, it can be longer, depending on the type of oven, the dish is ready when it is dry inside.

The Dukan diet consists of several stages. For those who have passed the first, difficult stage, they are then allowed to add vegetables to their diet. Vegetables that do not necessarily contain starch. Therefore, it is already easier to prepare delicious liver pancakes - using onions and carrots. This will add more variety to the taste.

Ingredients for making liver pancakes according to Dukan.

Peel onions and carrots. Finely dice the onion and grate the carrots.

In a frying pan, fry vegetables in 1 tbsp. spoon of butter. If it burns, add water and simmer, covered, until done.

Clean the liver from veins and films. Pass through a meat grinder, add bran.

Add the egg and salt, mix the liver mixture thoroughly.

Add the fried vegetables and stir again. Let the dough sit for 20 minutes to allow the bran to swell.

Heat a frying pan, add a few drops of oil and fry the pancakes. Turn the liver pancakes over to the other side, add water and fry covered until cooked.
