As already mentioned, the basis of any dietary soup is water. In addition to this component, the dish may include meat, fish, vegetables and even fruits. During the cooking process, the water is enriched with nutrients added to it. The resulting broth is quickly and easily absorbed by the body. Much faster than any solid food that does not contain water.

1. On milk and fermented milk products;

3. On vegetable or fruit broth or juice;

4. On meat broth;

5. With fish broth;

6. On a combined basis (milk and juice, meat and vegetable broth, and so on)

There are, of course, soups made with beer, kvass and wine, but these types of dishes are not suitable for dietary nutrition.

Considering the technological methods of preparing first courses, the category of dietary soups here includes:

1. Clear soups— based on concentrated broth, clarified using a draw.

2. Thickened soups– eggs, dairy products or flour are used as a thickener.

3. Cream soups– to obtain a puree-like consistency, various methods of mechanical grinding (grinding) are used.

4. Seasoning soups– the sautéing method is partially used for their preparation.

For dietary soups, a preparation method that includes frying is categorically unacceptable.

Soups are also distinguished by the main ingredient, in connection with which the dish is given the corresponding name. Any combination of ingredients for dietary soups is acceptable, subject to maximum balance of products and the degree of absorption of nutrients.

Let's look at a striking example: It is known that carrots contain beta-carotene - provitamin A, which belongs to the group of fat-soluble vitamins and therefore it is best absorbed by the body in combination with fat. It follows from this that, for example, carrot soup will not bring any benefit if it does not contain butter or cream, which, in turn, contain lactic acid, which most effectively dissolves vitamin A. That is, carrots You can eat it every day, whole kilograms, but to no avail.

The same thing happens with other products. It is necessary to know the principles of healthy, and not just taste, compatibility.

Vegetable diet soups

The basis of many low-calorie diets are vegetable dishes. It would seem that soup is the simplest dish that any novice housewife can easily and quickly prepare. So it is, if you know:

Vitamins tend to evaporate during their preparation and subsequent cooking, ending up in food in small quantities. This applies mainly to vegetable broths - the most difficult from the point of view of their proper preparation, due to significant losses of vitamins during heat treatment.

What else is important to remember when preparing vegetables for dietary soups?

Each of the products known to us has a different biochemical composition and different density, which, in turn, affects the cooking time. Therefore, when cutting vegetables, according to technology, into cubes or strips, or something else, it is important to follow the following order:

Firm vegetables should be chopped finer than less dense foods, with a loose structure, if the ingredients must be cooked at the same time - for example, for dietary puree soups;

If according to the recipe the vegetables must be whole, then, while maintaining the attractive appearance of the dish, the vegetables are cut into equal sizes, but dipped into boiling water one at a time, starting to cook the hard ingredients first, and then adding the soft ones. For example, first boil the potatoes until half cooked, and add cabbage, fresh pepper, and herbs a little later.

It will be very helpful to know that:

Sliced ​​potatoes are cooked for about a quarter of an hour, depending on the type of potato and the cut;

Broccoli – 7-8 minutes (as a whole inflorescence), 3-4 minutes – cut into slices;

Shredded carrots - up to five minutes, cut into cubes 0.5x05 mm - 10-12 minutes.

This - examples. If you have such a table at hand, you can absolutely accurately calculate the cooking time for any dish, not just dietary soups. And, by the way, it is necessary to take into account that after the pan of soup has already been removed from the stove, that is, the boiling temperature of 100 - 104 ° C will decrease gradually, during the cooling process, then, for example, dill, parsley or other herbs can be thrown into boiling water at this very moment. The aroma and vitamins of fresh herbs will be transferred to the soup without loss, but the pan must be covered with a lid. Do not be afraid that uncooked green leaves will lead to sourness of the soup: pasteurization temperature, 80°C; and it is quite enough for heat treatment. The soup will not immediately cool down to the pasteurization temperature, and the natural cooling time is enough for the greens to steam without additional heating on the stove.

Remember that many peeled and cut vegetable products, remaining open on the table, lose half of their valuable properties within half an hour. This is especially true for vitamin C, which is contained in many vegetables in varying amounts.

To avoid significant losses of valuable product elements, you need to carefully consider the sequence of work in preparing dietary vegetable soups and organize the workplace in such a way as to perform operations quickly and in a clear sequence. Knowing some techniques will help with this, for example:

Potatoes can be peeled and cut in advance, and then placed in a container filled with cold water. It contains vitamin C in very small quantities, and all other vitamins will be safely preserved until the end of cooking. But if you add water to chopped potatoes and change it 2-3 times, the starch will be partially washed out of the vegetable - a source of carbohydrates, which is what the preparation of dietary soups for people suffering from diabetes or struggling with extra pounds is aimed at combating. But if you need, for example, to prepare broccoli, parsley and sweet peppers containing equally rich amounts of vitamin C for preparing dietary soups, then, knowing the properties of the products, you can cover the vegetables with acidified water. In this case, all that remains is to drain the vegetables through a colander before putting them in the pan.

Some vitamins, unfortunately, will disappear during heat treatment. How to counter this undesirable effect? If you have a multicooker in your home, then a solution to the problem has been found, since this technique allows you to prepare dishes while maintaining the maximum content of beneficial properties. If one is not available, then try not to tear off the lid of an ordinary saucepan unless absolutely necessary - at least partially, this will help preserve the maximum vitamins in dietary soups.

Meat and fish dietary soups

Having considered the most complex category of soups, from the point of view of their preparation while maintaining maximum benefits, there is little left to say about soups made from meat and all its types, as well as fish and seafood.

From the point of view of dietetics and healthy eating, these products are valued for their high content of protein, fats, amino acids, many mineral elements, and in fish products - also phosphorus. These elements are more temperature resistant than vitamins. Therefore, semi-finished meat and fish products retain their nutritional value even with prolonged heat treatment.

Dietary soups are prepared on the basis of meat or fish broths and are also prepared with the addition of vegetables. In this case, the same principles are followed as for preparing vegetable soup. Apart from choosing quality products and choosing the right spices for such soups, there are no special subtleties in their preparation.

Dietary milk soups

As a rule, pasta or cereal products are most often used as ingredients for preparing milk soup. But there are also recipes for milk soups with vegetables or fruits. For dairy dietary soups, dairy products of varying fat content are used, with or without the addition of water. Pasta or cereals are added to boiling milk with continuous stirring. For a milk diet soup with cereals and vegetables, the latter can be cooked separately, in water, and then added to the milk-cereal mass. Vanilla, cinnamon, saffron, and citrus zest are ideal spices for dairy dietary soups. As a rule, sugar or other sweeteners are added to milk soup if sugar is contraindicated.

Recipe 1. Diet poultry soup - clear rooster broth with vegetables

Remove the skin from the gutted carcass of a young rooster and cut into pieces. The skin is removed from the chicken so that the broth is dietary. Any meat broth will become even tastier if you add a small spoonful of sugar to it - not for sweetness, but rather for piquancy. Strain the broth. Recipe 2. Diet soup with fish broth - “Tsarskaya” fish soup

Also cut the fish fillet into portions. Strain the finished broth through a sieve lined with gauze, folded into 4 layers, and then pour it back into the pan. When it boils again, throw in the potato cubes one by one, after 3 minutes – the carrot and celery cubes, add the pieces of fish along with the onion. Before finishing cooking, add salt and spices. When serving, chopped dill is added to each serving.

Preparation:

Wash the rice and leave in cold water for at least half an hour. Prepare vegetables: wash and peel.
