Quick holiday table

Recently I had to put together a holiday table in a hurry. There was little time to prepare - only 2.5 hours + another 1 hour for a quick run to the store for everything you need. I made it. It turned out very tasty, the guests were satisfied.

I'll tell you how you can manage your time, have time to assemble a table and not get too tired. And what to whip up for guests.

What should be on hand

  • Good knives (a sharp small one and 1 large one are enough for me);
  • Cutting board (2 possible);
  • Grater (large and small);
  • Several bowls for preparing and mixing the dish;
  • Spices (which you usually use);
  • Apron;
  • Dishes for table setting (plates-forks-spoons-glasses-glasses-glasses and utensils for tea-coffee: cups-saucers-plates for cake-teaspoons), napkins, a jug for drinks (for compote, juice), tablecloth.
  • Dishes for serving dishes to the table and tablespoons (for laying out salads and other dishes);
  • Utensils for cooking (pots, pans, kettle).

In addition, the house needs clean hand towels, toilet paper, soap. Maybe slippers if you and your guests usually wear them.

I cooked in a foreign country. Therefore, I took with me: an apron, spices (dried basil) and a grater (suddenly not in the house). If you go to cook in someone else's house and are not sure if there are convenient knives there, I advise you to definitely grab your own, proven ones.

What can you buy in the store

We assume that time is running out. Therefore, complex salads, for which you need to cook and cut a lot of different ingredients or lay them out in a special way, are not suitable for us. You can take them, but only ready-made ones. Yes, I know that ready-made salads are evil, but we have an urgent men's birthday. Here - either everything is from the supermarket kitchen, or we still have time to prepare some of the dishes ourselves, giving the table a homely look.

With our own hands we will only do things that can be prepared quickly. The principle of distribution of forces is as follows:

  1. A few homemade quick and easy meals.
  2. Some prepared food (1-2 salads, 1 meat). This is to guarantee that we will be fed something if we don’t have time to cook.
  3. Snacks - something that will be a tasty addition to dishes or diversify the table, but does not require cooking (sausage, cheese, olives, cherry tomatoes, fruits, candies and other snacks).

I only write what I chose for a specific birthday.for 7-8 people. And you are guided by the situation.

Shopping list

Of the spices, I only had dried basil (for cutlets and cucumbers, but you can do without it). Check if you have salt at home. Otherwise, it must be added to the list.

Ready-made culinary dishes

  • Salads with mayonnaise to choose from: – 700-800 g– Olivier (almost a win-win option, most guests love him, that’s what we bought). Herring under a fur coat is also an option; women love it. You can take any other delicious salad that you have already bought here and are confident in its quality.
  • Baked/fried meat: – piece by piece, by the number of guests. We took the meat in French style. Can be replaced or supplemented with chicken thighs or legs (oven-baked or grilled). Choose something traditional, beautiful and fresh.
  • Vegetable salads – 400 g(not all of them will be). Instead of vegetable salads, we bought 300-400 g of marinated champignons with onions. Options: cabbage salad or sauerkraut if you like it spicy: Korean salads (seaweed, mushrooms, pork ears), Georgian cabbage (large pieces in beet juice). Spicy and fresh diversify the taste sensations of guests.

Semi-finished products

  • Minced meat (we have delicious pork-beef, pork-chicken and chicken) – 700-800 g.

Canned food

  • Pickled cucumbers(gherkins) – 1 jar(not necessarily, we haven’t opened it, and there are so many). You can – pickled tomatoes;
  • Mushrooms (salted are tastier than pickled) – 1 jar. We didn’t buy anything, we made do with those from the culinary industry;
  • Olives and black olives1 jar each;
  • Pineapples – 1 jar(480 g). This is for a salad with cheese and garlic.

Vegetables fruits

  • Cherry tomatoes (fresh) – 500 g (packaging). Place the whole sprig on the table. They are very well eaten between times, like grapes (you can take and / or grapes - both on a salty and sweet table). Choose those cherry tomatoes that sit firmly on a branch, they are fresh (those that have fallen off have been standing for a long time).
  • Fresh cucumbers – 5-8 pieces(medium size). This is for quick lightly salted cucumbers;
  • Potato - 2-2.5 kg(whole plastic bag);
  • Lemon – 1 piece;
  • Garlic - 1 head;
  • Bulb onions - 2 heads(in salad and cutlets);
  • Dill - bun.
  • Tangerines, grapes, any seasonal fruits and berries. We had 1 kg of tangerines.

Sausage, cheese, minced meat, fish, eggs

  • Boiled sausage (doctor’s) – 0,5 small loaf;
  • Boyarskaya sausage(type of ham) – 0,5 small loaf;
  • Cheese Black Prince(Belarusian) – 250 g. The taste is good, traditional;
  • Cheese (some kind of regular cheese, like Russian, in a salad) – 100 g;
  • Processed cheese (Friendship or Orbit) – 1 piece;
  • Eggs - 1 ten(large);
  • Herring in oil – 1 package;
  • Mayonnaise (the hostess’s dream turned out to be quite normal) – 1 small package (200 ml);
  • Vegetable oil for frying(you only need a little, maybe you have a quarter of a bottle at home).

Beverages

Remember that at a rich table you always want to drink and 1 glass of compote or juice will not be enough for a guest (assume that everyone drinks 2-3 glasses).

  • Alcohol: wine, martini, vodka - whatever you like. We have 1 bottle each: white and red wine (dry and semi-sweet), Martini Bianco. We drank a little, but everyone had a choice. Focus on your company.
  • Juice - 2-4 liters(orange, grapefruit, apple, multifruit, tomato) - whatever you like. You can use a three-liter jar of homemade compote.
  • Mineral water – 2 bottles 1.5 liters each.
  • Tea - package. Perhaps coffee (we made do with regular Ahmad tea);
  • Sugar - package lump (refined sugar) or 0.5 kg of regular bulk.

Hercules or semolina- it lies right next to it (you will need a couple of handfuls for cutlets). I took a package of rolled oats, then the owners will cook porridge from the leftovers.

Sweet

  • Cake - 1 piece(we had 800 g of honey and sour cream, the most common, similar to homemade).
  • Candies - 500 g. I bought by weight, 3 types - Gulliver (cool, big), Mishka (good) and some ordinary ones. You can just have a box or do without candy.

Bread

Take everything in slices, remember that we don’t have time.

  • Black or custard - 1 loaf/loaf;
  • White bread or loaf – 1 piece.

What dishes were on the table (menu)

  • Cutlets (cooked) - 12-14 pieces came out (depending on size);
  • French-style meat – 7 pieces;
  • Olivier salad - a large salad bowl;
  • Pineapple salad with cheese and garlic (prepared) – 1 medium salad bowl;
  • Stuffed eggs - 2 plates, Jewish salad of processed cheese with garlic (prepared);
  • Sliced ​​meats (2 types of sausage and cheese) – 2 plates;
  • Olives and olives;
  • Herring with onions;
  • Pickled champignons;
  • Mashed potatoes). I made it with olive oil; I didn’t have any butter or sour cream or milk at home. It turned out delicious.
  • Cherry tomatoes;
  • Korean-style tomatoes (prepared in advance).

Procedure

    Stewed cutlets

    Hard boil eggs– Boil 9 pieces, the tenth raw one is minced. Place in cold water, bring to a boil, cook for 10-12 minutes. Cool in cold water.

  • Prepare minced meat for cutlets: break 1 egg into the minced meat, add rolled oats (1/2 or 2/3 cup), grate a couple of cloves of garlic (fine grater) and 1 onion (coarse grater) into it. Add a pinch of basil. Add salt. Knead. Let it sit while we peel the potatoes - the flakes will swell and absorb excess moisture.
  • Lightly salted cucumbers cook and then peel potatoes(put in water, set to cook 40-50 minutes before guests arrive). Quick preparation of lightly salted cucumbers in slices: wash, cut off the ends. Cut each cucumber in half and cut the rugs into 4 slices. Throw the slices (as they are cut) into a container or jar and add salt on top. Chop a few sprigs of dill and 2-3 cloves of garlic and add to the cucumbers. Close the lid and shake vigorously for 2-3 minutes. Then leave at room temperature until serving (with the lid tightly closed). You can shake them periodically (as soon as you remember them, shake them, they will be better salted).

    Lightly salted cucumbers

  • Fry the cutlets– heat the oil in a frying pan, form cutlets and fry them on both sides until a small crust appears. Fried - place in a pan with a layer of oil at the bottom. When all the cutlets are in the pan, add 2/3 cup of cool water, cover with a lid (or open it slightly if there is no hole in the lid for steam to escape so that the water gradually evaporates) and simmer over low heat until the cutlet smells (30 minutes) . Be careful not to burn.
  • Eggs stuffed with salad

    Stuff eggs– Peel the hard-boiled eggs and cut them into halves. Remove the yolks and mash them with a fork. Add finely grated: processed cheese and 2 cloves of garlic, finely chopped onion (1/2 head). Mix. Season with a small amount of mayonnaise. Stuff the eggs with the resulting salad (1 teaspoon per egg). There is no need to compact them, let them be heaped. I decorated with dill and a piece of sweet pepper (yes, we didn’t buy it, I found it in the owner’s refrigerator, but this is not necessary). 4 eggs fit on a dessert plate (7 halves in a circle + 1 in the center), I had 9 (18 halves), the extra one was somehow squeezed in. Before serving, each plate can be placed in a plastic bag (so that the bag on top does not come into contact with the eggs, let air in there). And put in the refrigerator until serving.

  • Cut sausage and cheese. I cut the sausage loaf lengthwise into 2 parts and then cut it into thin semicircles across the loaf. You probably cut the same way. Place the slices on plates, put them in bags and also put them in the refrigerator so that the slices do not spoil or become rotten.
  • Make a pineapple salad. Place pineapples in a bowl (pieces or cut rings into pieces), grate cheese (hard, like Russian) into it - a coarse grater, garlic (2 cloves) - a fine grater. Closer to serving, stir and season with mayonnaise.

As you go along, you need to set the table - entrust this to someone at home or run around yourself during breaks between cooking. Set the table, cover with a tablecloth, arrange the plates, lay out napkins (place additional ones in the napkin holder), and forks. Place glasses and glasses. Bring drinks to the table. Place the bread on a plate (cover with a napkin or put it in a bag for now).

  • Assemble the table: gradually place all the prepared dishes in salad bowls and plates and transfer them to the table. You can immediately put bowls of olives and black olives (they won’t spoil); pickled cucumbers and tomatoes; Place the herring in the herring bowl, add the onion cut into semicircles (half of the stuffed eggs is left). Just when the cutlets arrive, the potatoes are cooked (drain the water, add salt, add oil, mash). I also cut lemon for tea (I sprinkled the circles with sugar to make it tastier, but whoever likes it). Remove salads and cold cuts from the refrigerator right before guests arrive to prevent them from spoiling.

Pancakes with various “economical” fillings. We wrap various fillings in thin pancakes: finely chopped or grated boiled eggs, rice with fried onions; liver with onions and eggs; mashed potatoes with mushrooms and fried onions; cheese with mushrooms; sliced ​​boiled sausage with mushrooms and cheese.

Salad with “Fish” cookies. Lay out in layers: “fish” cookies, coat with mayonnaise, grated smoked cheese (“Kolbasny”), finely chopped chicken breast with green onions, 3 finely grated eggs, a layer of mayonnaise. It’s better to let it sit in the refrigerator for 2-3 hours so that the cookies “soak.”

Salad with fresh vegetables and herbs:
Option 1: young cabbage, cucumber, dill, green onions, sour cream, salt.

Tomatoes with cheese and garlic. Cut the tomatoes into rings, put grated cheese with garlic and mayonnaise on top.

Fish in sauce. Ingredients: 3 large pollock, 1 carrot, 1 onion, 100 gr. milk, 2 tbsp. spoons of sour cream, salt, pepper. Place the fish in a hot frying pan, fry on both sides, add chopped carrots and onions, simmer for 5 minutes, add milk, sour cream, seasoning, simmer for another 5-10 minutes.

We wash the ham well and place the whole meat in a large saucepan for cooking. Pour cold water on top, add a cinnamon stick, black pepper and bay leaf. After boiling, cook over moderate heat for 2 hours. We periodically check that the meat is completely covered with water, and if necessary, add hot boiled water. Don't forget to remove the foam.

Remove the meat from the broth. The broth can be used for soup, vegetable stew or frozen. Now carefully separate the skin, leaving the fat layer.

Now, using a sharp knife, draw transverse lines along the fat to form diamonds. Insert a clove into the corners where the lines intersect.

This semi-finished product can be prepared in advance and stored in the refrigerator for up to 2 days.

Let's prepare the glaze. Mix maple syrup (honey), mustard, Worcestershire sauce and soy sauce.

Place the ham in a heat-resistant dish, coat it with a brush (use 1/2 of the glaze). Bake in the oven at 190°C for 15 minutes. Then coat with the remaining glaze again and bake for another 40 minutes. When baking, it is advisable to pour the resulting juice over the meat.

This beauty can be served either hot or cold.

Pork ham in the oven with cranberry syrup


The second, no less tasty, recipe for glazed ham, which is perfect for a holiday table, can be prepared with cranberry syrup.

For this dish we will need:

  • - pork ham - 2-2.5 kg.
  • – cranberries – 300 gr.
  • – canned apricots – 400 gr.
  • – brown sugar – 100 gr.
  • - port wine - 70 ml.
  • – bay leaf – 4 pcs.
  • – cloves – 20 pcs.
  • - peppercorns - 1 tsp.

Soak the ham in cold water for 6-8 hours, drain the water, and transfer the ham to a saucepan and fill with fresh water. Bring the water to a boil, drain again and fill with cold water again. Add bay leaf and pepper to the broth and cook over low heat for 30 minutes. Making cranberry glaze. To do this, cook the cranberries and sugar in 150 ml of water (about 5 minutes), remove the cranberries from the syrup, and cook the syrup for another 1 minute. Pour port wine into it.

The following procedure is the same as in the first recipe. Cut the skin off the ham. We make diamond-shaped grooves on the fat layer. We insert cloves into the intersections of the lines. Lubricate the ham with ½ syrup and bake in the oven at 190 ° C for 45 minutes. Brush with the remaining half of the syrup and bake for another 1 hour. When serving, garnish with cranberries, lettuce leaves or apricot halves.

Lamb baked in English with rosemary


Lamb is a valuable and nutritious meat, which contains 3 times less fat than pork and 4 times less cholesterol. Therefore, for those who do not want to gain extra pounds during the holidays, this recipe is suitable.

We will need:

  • - potatoes - 800 gr.
  • - tomato sauce - 3 tbsp. l.
  • – garlic – 3-4 cloves
  • - vegetable oil - 2-3 tbsp.

Cut the meat into medium pieces and marinate - salt, pepper, sprinkle with spices, add a few sprigs of rosemary and leave for an hour.

Then everything is very simple - place the meat in a baking dish. On top we place potatoes cut into thin slices and onions cut into half rings. Salt and pepper. Finely chop the garlic and herbs and sprinkle on top.

In conclusion, pour lamb with tomato sauce, slightly diluted with water. Bake in the oven at 180°C for about 2 hours.

Let's prepare the filling. Cut the onion into cubes. We clean the champignons and also cut them into cubes. Fry onions and mushrooms in a frying pan with vegetable oil. Cool the filling a little and add grated cheese and finely chopped herbs, salt and pepper.

In this recipe, the meat must first be cut into portions and marinated. To do this, place the meat in pieces in a bowl, add salt, pepper, and sprinkle with seasonings. Squeeze the juice from 2 oranges, mix with half a portion of olive oil, pour this marinade over the meat and leave for 4 hours.

Now take each piece of meat out of the marinade, squeeze it a little and fry in a frying pan until golden brown on both sides.

Place the meat in a baking dish, place the piece vertically, and place oranges cut into slices between the meat. You can peel the oranges if you wish. Pour marinade over this beauty and bake in the oven at 190°C for 40 minutes.

A very colorful dish that looks great on a festive New Year's table. Guests will certainly appreciate it. It’s not a real holiday without caviar, so I recommend this dish for your New Year’s table.


Ingredients:

  • - salmon (can be replaced with salmon) - 1 kg
  • - Provençal herbs spices
  • - vegetable oil
  • salt, pepper to taste

for the sauce:

  • - cream 20% - 200 ml.
  • - turmeric or curry powder - 2 tsp.
  • - parsley - 2 tsp.
  • - red caviar - 2 tbsp. l.

Cut the fish into portions. Salt, pepper, sprinkle with herbs. Put the fish in a baking dish.

Prepare cream sauce. Mix cream and chopped parsley. Pour turmeric into the cream and mix well until smooth. Add caviar to the sauce.

A stunningly beautiful dish. Of course, it requires certain skills and labor, but the dish is worth it.

We will need:

  • – pike – about 1 kg
  • – white bread – 100 gr.
  • – milk – 1 glass
  • - egg - 1 pc.
  • - onions - 3 pcs.
  • - mayonnaise - 2 tbsp. l.
  • - greens - to taste
  • - salt pepper

We cut up the fish. We clean it, the carcass should remain intact, the fins should not be cut off. Cut off the head, remove the gills. Now the most difficult thing is to carefully remove the skin; to do this, carefully cut the meat in a circle with a sharp knife, trying not to damage the skin.

At the base of the tail, cut off the bone and remove the pulp. Separate the fish fillet from the bones.

Preparing the filling for the pike. Soak white bread in milk. We grind the fish fillet through a meat grinder (I grind it in a blender for speed). In a blender we also grind the onion and bread, add salt and pepper to taste, beat in 1 egg.

Mix all ingredients thoroughly until smooth.

Now very carefully stuff the pike with minced fish, trying not to damage the skin.

Place foil on a baking sheet, grease with vegetable oil and place the fish. Attach the head. Coat the fish with mayonnaise. We wrap the foil and bake in the oven for about an hour at a temperature of 180 ° C.

Place the carp on a baking sheet and bake at 180°C for about 1 hour.

Beat the egg, add a little salt. Remove the carp from the oven and brush with ½ of the egg mixture. Then bake for another 10 minutes and brush again with the remaining mixture. When the carp is nicely browned, remove it from the oven, decorate the dish and surprise your guests.

Fish with mayonnaise, baked in the oven


Low-fat and even dry fish are suitable for such a dish; its taste will be wonderfully revealed under a pillow of cheese and vegetables.

We will need:

  • – fish – 1 kg.
  • – carrots – 2 pcs.
  • – onions – 2 pcs.
  • - cheese - 200 gr.
  • - mayonnaise - 150 gr.

Now we lay it in layers according to the principle of meat in French:

1st layer – place the fish in the mold

2nd layer – cut onion into half rings

3rd layer – three carrots on a coarse grater

4th layer - three cheeses, again on a coarse grater

And finally we coat it all with mayonnaise.

We send it to the oven preheated at 190 C and bake for about 30 minutes. When you see a delicious orange crust, the fish is ready.

For a small group, duck with apples is a very tasty and festive dish. And it cooks much faster than goose. But keep in mind that there is not a lot of meat at the end. Consider the number of guests and if there are more than four, then buy two or more carcasses.

We will need:

  • – duck – 1 pc.
  • – apples – 3 – 4 pcs.
  • – lemon – 1 pc.
  • - sour cream - 80 gr.
  • - salt, pepper, poultry seasonings
  • - cinnamon to taste

First gut the duck, rinse and dry with a paper towel.

Rub the carcass with salt, pepper and seasonings.

Cut the apples into large slices, lemon into slices, sprinkle it all with cinnamon and place it inside the carcass.

Sew up the hole, coat the carcass on all sides with sour cream. Place the duck breast side down on a baking sheet and bake in the oven for about 1.5 hours.

Festive goose with apples

The goose is designed for a larger company, the average weight of a goose is 4-5 kg, and the cooking time increases accordingly. But it is necessary to marinate and prepare the goose for baking in a day.


We will need:

  • – apples – 1 kg
  • – lemon – 1 pc.
  • - apricot jam - 100 gr.
  • - salt, pepper to taste
  • – garlic – 3-4 cloves
  • vegetable or corn oil - 50 ml.

Don't forget that goose takes a long time to bake, so start cooking it about 5-6 hours before your guests arrive.

The goose must first be gutted, rinsed with cool water. Prick the skin in several places with a needle. Now it is advisable to scald the goose with boiling water.

Rub the carcass with salt, pepper and garlic and put it in the refrigerator for a day.

Cut the apples into large slices and stuff the carcass with them.

To keep the goose in shape, we tie the legs and tie the goose with thread so as to tighten the wings.

Lubricate the carcass with vegetable oil.

If you find a large baking sleeve, it is best to bake in it. But if there is no sleeve, then you can cover the top of the carcass with foil.

Bake the bird at 200°C for about 1 hour, then lower the temperature to 160°C and bake for another 3 hours.

Mix apricot jam with the juice of half a lemon and the remaining oil, heat the mixture and, using a pastry brush, evenly coat the carcass. After this, put the bird in a still hot oven to rest for 10 minutes.

New Year's turkey with oranges

In Europe, England and America, a very popular Christmas dish is baked turkey. The whole family is looking forward to this culinary miracle from the hostess. Let's try to please our loved ones.


We will need:

  • – turkey – (5-6 kg.)
  • – oranges – 3 pcs.
  • – apples – 2 pcs.
  • - onion - 1 pc.
  • – fresh or frozen lingonberries – 50 gr.
  • - chopped bacon - 150 gr.
  • - salt, pepper to taste
  • - garlic - 1 head
  • - rosemary, thyme - several sprigs
  • - butter - 250 gr.
  • - vegetable or olive oil - 1 tbsp. l.

First gut the turkey, rinse and dry with a paper towel. Salt and pepper.

Now we will prepare the oil for rubbing the turkey, which will make the dish juicy and fragrant. Salt and pepper butter at room temperature, add olive oil (although I prefer vegetable oil) and garlic pressed through a press. Squeeze the juice from one orange, grate the zest on a fine grater and also add to the oil. Add some herb leaves here.

Now lift the skin at the top of the breast and put some of the spiced oil into the resulting pocket. Do the same procedure with the lower part of the breast and legs. This should take half the oil. Rub the remaining half of the oil into the skin of the turkey. Top the carcass with salt and pepper and sprinkle with a little olive oil.

Wrap the turkey in foil and marinate in the refrigerator for at least 2 hours.

Cut the oranges, apples and onions into 4 parts, cut the head of garlic in half crosswise. Stuff the turkey with this, add more herbs rosemary and thyme. Place the bird in a baking dish and cover with foil.

We bake the bird at a temperature of 220 ° C for about 30 minutes and pour over the resulting juice.

Lay the bacon slices on the turkey breast, pour over the juice again and bake at 180° for about 3 hours, basting occasionally with the juice. Serve with hot turkey gravy and lingonberries. If desired, you can prepare lingonberry sauce.

Chicken baked in a sleeve in the oven

The easiest and fastest dish for a festive table is chicken baked in a sleeve. It turns out a hearty, healthy and beautiful treat, even novice housewives can cook this.

We will need:

  • - chicken - 1 pc.
  • - prunes - 100 - 150 gr.
  • - dried apricots - 100-150 gr.
  • – garlic – 2-3 cloves

We will bake the whole chicken.

We measure the required length of the sleeve, tie the sleeve with a knot on one side, put our chicken there, and secure the other end with a clothespin.

Bake for 40 minutes at a temperature of 180-190 ° C.

If you want to get a golden brown crust, 15 minutes before cooking, cut the top of the sleeve and bend the edge a little.
