For the first experiment, I used only dark raisins as a top dressing. I'll tell you and show you what I did.

To prepare the drink I prepared:

  • 2-liter jar;
  • not cleaned boiled water(you can use filtered, spring water, but not from the tap or boiled);
  • about 10 seedless raisins;
  • 3 tbsp. l. Sahara;
  • 4 tbsp. l. sea ​​rice (not dried).

I washed the jar well with hot water without using detergents - they are harmful to the fungus. I also washed the raisins. Place the sea rice in a colander and rinse well under running water.

Now important point– the sugar must be well dissolved so that not a single grain remains, otherwise your “pet” may get burned.

A day later, the water in the jar became a little cloudy and bubbles appeared - the fermentation process began.

After two days, we got an interesting sweet and sour drink with a faint smell, similar to leaven, that you can drink.

When the drink is ready, open the jar, take out the raisins and floating grains of rice, pour the liquid into a separate jar, strain through cheesecloth, and you can drink. I really liked the taste - light, thirst-quenching.

This drink can be stored in the refrigerator for up to 3 days.

We wash the remaining sea rice well again - this is a very important point, prepare a fresh sweet solution with dried fruits and add rice there. Leave for 2 days.

For further use, it is better to divide the existing rice into 2 portions - send one to a sugar solution, and rinse the second well, put in a glass container and leave to rest in the refrigerator. After two days, the portions are swapped.

Having experienced the influence of the fungus on himself and significantly improved his health with its help, Shtilman devoted a lot of time to determining its biological identity. He found that calling this organism a mushroom is incorrect, since it is very similar to both kombucha and Tibetan milk mushroom. As a result, all researchers, following Shtilman, began to classify Indian sea rice as a group of zoogles.

Zooglea (from the Greek gloios - sticky substance) is a mucous formation that occurs when bacteria that are capable of secreting mucus stick together. It is characteristic only of aquatic bacteria, which is why water is necessary for their life. From them they get nutrients, required for their life activities, while highlighting what turns out to be important in this case for a person.

Shtilman also pointed out the difference between the Indian sea mushroom and the tea mushroom: the first has a thin mucous film, the second has a dense one. In the Indian mushroom, it forms if you do not change the water in the container where it is located for 3 days. However, the presence of a mucous film made it possible to say that both zoogles are connected to each other. According to Shtilman, Indian sea rice is kombucha grains.
